Competitions
For me competitions represent a challenge, a different way of learning, a way of measuring my knowledge and evolving.

I started at age 15 with the Concours des Mains d’Or, and 25 competitions would follow, I enjoyed it!

1992 - Berthelot Challenge,
1st prize gold medal of St Michel
1993 - Joseph Armand Trophy, 1st prize
1994 - Bol d'or Interglace Paris, 1st prize
1995 - National Carpigiani Trophy, 1st prize
1995 - National Ice Cream Trophy, 1st prize
1995 - I created an eagle and a swordfish for the French ice sculpting championships; this discipline is a fleeting and instinctive art form, like pastry.
1997 - Pastry World Cup selection,
1st prize in ice cream, selected to represent France.
1999 - I became Pastry World Champion...

In 2000, I was awarded with the Meilleur Ouvrier de France ice cream title.
